About Us
Giancarlo was born in Lumezzane, northern Italy, in the Lombardy region, east of Milan. He came to the U.S. in 1971 to attend high school and start an apprenticeship with his uncle, Emil Waldis, a Swiss pastry chef, owner of Emil's Gourmet International in Lynchburg, VA.
After working in Cleveland, OH as pastry chef for Oakwood Club, he then relocated back to Virginia where Giancarlo worked as executive assistant pastry chef for six years at The Homestead in Hot Springs, VA.
In 1987, he and his wife, Jane, opened Cafe' Giancarlo and Fine Pastries for five years on the Downtown Mall in Charlottesville.
Giancarlo was employed at Keswick Hall as executive pastry chef for five years.
Since spring of 1998 Giancarlo and Jane continue to operate Giancarlo Fine European Pastries in Staunton, VA in their bakery which houses a small commercial kitchen and retail room displaying weekly delectable desserts, an assortment of tarts, cake, danish pastry, fine chocolates, and specialty breads for retail sale.
There are no flashing signs or decorated windows but a treasure to discover!
The shop is open for retail sales on Fridays 9-5:30 and Saturdays 9-3. Custom orders may also be placed and picked up other days of the week by appointment.
